Three plots are harvested for Les Peignottes that were planted in 1920, 1975 and 1990 on pure chalk soils. 45% fermented in old Burgundian barrels, aged on lees for 5 years and bottled with zero dosage. The wine is a bundle of chalk driven nervous energy and tension but at no points is aggressive or abrasive.
