Small parcels of fruit were crushed and fermented in 2 - 4 tonne batches
mandarin and cantaloupe with a twist of lemon
Quite strong liquorice aromas in the finish
Eight ferments were created with different yeast strains including one wild ferment to draw out textural fruit nut and biscuit characters
She's delivered a beautifully fresh and vibrant fizz too with this delicate appley number like a fresh mountain stream (just with alcohol and some pretty white flowers and more appley fruits)
